Baby Red Potato Salad

Josh absolutely loves potato salad, it's pretty much the only side he wants when lunch time comes around. This is a delicious and hearty potato salad packed with veggies! Most of the time when I buy potato salad at the grocery store, it ends up being more mushy sauce than substance. This still as tons of flavor while only having 92mg of sodium per serving, and it serves 9!



What you need:
  • 1 1/2 - 2lbs red potatoes, cooked and diced (I like the baby reds)
  • 1 or 2 ribs of celery with leaves, chopped
  • 5 medium radishes, chopped
  • 1/4 medium onion chopped
For the dressing:
  • 3 tablespoons fat-free or low-fat sour creamm
  • 2 tablespoons plus 1 1/2 teaspoons vinegar
  • 2 tablespoons fat-free or low-fat mayonnaise (I like kraft mayo with olive oil, it has less sodium!) 
  • 2 tablespoons fat-free or low-fat plain yogurt (use greek yogurt for more protein)
  • 1 tablespoon sugar
  • 1 teaspoon dry mustard or 1 tablespoon home made hot mustard (see this post for the recipe)
  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon pepper
  • 1/2 teaspoon turmeric (optional)

In a large bowl, stir together the potatoes, celery, radishes, and green onions.
In a small bowl, whisk together the dressing ingredients.


Pour together the potato mixture, stirring gently to combine. Cover and refrigerate for about 2 hours before serving.
